Ginger cookies with an almond flour

The recipe of gingerbread cookies with an almond flour and dried apricots is below.


Ingredients

  • 1 cup (250 ml) whole wheat flour
  • ½ cup (125 ml) almond flour
  • ½ cup (125 ml) melted coconut oil
  • ¼ cup (60 ml) cane sugar 
  • ¼ cup (60 ml) chopped dried apricots 
  • 1 teaspoon (5 ml) ground ginger 
  • 1 teaspoon (5 ml) ground cinnamon
  • ½ teaspoon (2 ml) baking soda
  • 1 teaspoon (5 ml) apple vinegar

Directions

  1. Heat the oven to 350°F (180°C). 
  2. Combine flour, ginger, cinnamon, dried apricots and sugar.
  3. Add the vinegar to the baking soda. Add to the dough.
  4. Add the coconut oil. Stir.
  5. Make the cookies.
  6. Line a rimmed baking sheet with a parchment paper. 
  7. Put cookies.
  8. Bake about 10-15 minutes.
  9. Cool about 5 minutes.
Cook time: 20-30 minutes
Makes: ~250 g cookies
Tips: Maybe you need more flour or coconut oil. See on the consistency of the dough. If the crumbs do not come together in a ball, add a little more oil; if the dough sticks too much to your hands, stir in some flour.

Ingredients1 ½ cup (375 ml) whole grain macaroni¼-1 teaspoon (1-5 ml) garlic powder, to taste½-1 ½ teaspoon (2-7 ml) pink salt, to taste¼ teaspoon (1 ml) black pepper, to taste1 tablespoon (15 ml) nutritional yeast1 tablespoon (15 ml) vegan butter1 tablespoon (15 ml) rice flour½ teaspoon (2 ml) onion powder½ cup (125 ml) almond milkDirections Cook the macaroni according to the instruction on the package.Rinse and drain the macaroni. Mix all dry ingredients.Add the milk and all dry ingredients to the macaroni. Stir.Cook for about 2-5 minutes on the medium-high heat. Add the butter.
