The vegan recipe of the mashed sweet potato with fried cauliflower you can find below.


  • 1 big sweet potato
  • 1 cauliflower
  • 1 onion
  • 1 tablespoon (15 ml) melted coconut oil
  • 3 cups (750 ml) water
  • ½ cup (125 ml) chopped fried tofu 
  • 1 tablespoon (15 ml) vegan butter
  • 1-2 teaspoon (5-10 ml) pink salt, to taste
  • ½ teaspoon (2 ml) black pepper, to taste
  • 1 teaspoon (5 ml) turmeric (curcuma)
  • ½ teaspoon (2 ml) garlic powder, to taste
  • 3 tablespoon (45 ml) salted roasted peanuts


  1. Place a pan on the stove over medium-high heat.
  2. Peel and cut the sweet potato. Add to the pan. Add 1 ½ cups of water. Bring to boil. Add 1 teaspoon of salt. Reduce the heat to low. Cook until ready, about 30-35 minutes.
  3. Almost drain the potato. Leave half of the water in the pan. Mash the potato using a potato masher or electric beater. Add the vegan butter. Stir.
  4. Place a large skillet on the stove over medium-high heat.
  5. Peel and cut the onion. Cut the cauliflower.
  6. Add the coconut oil to the skillet. Add the chopped onion. Fry about 5-7 minutes.
  7. Add the cauliflower to the skillet.
  8. Add the ½ or 1 cups of the water, depends on the size of the cauliflower. Cover with a pan lid. Bring to boil. Reduce the heat to low. Cook until almost ready 7-9 minutes. It needs water to almost evaporate.
  9. Add the fried tofu. Stir. Cook about 5 minutes.
  10. Add the salt, spices. Stir. Cook about 2-3 minutes.
  11. Add the salted roasted peanuts when serve. 
Cook time: 40-50 minutes

Ingredients1 ½ cup (375 ml) whole grain macaroni¼-1 teaspoon (1-5 ml) garlic powder, to taste½-1 ½ teaspoon (2-7 ml) pink salt, to taste¼ teaspoon (1 ml) black pepper, to taste1 tablespoon (15 ml) nutritional yeast1 tablespoon (15 ml) vegan butter1 tablespoon (15 ml) rice flour½ teaspoon (2 ml) onion powder½ cup (125 ml) almond milkDirections Cook the macaroni according to the instruction on the package.Rinse and drain the macaroni. Mix all dry ingredients.Add the milk and all dry ingredients to the macaroni.
